Ingredients
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1/2 cup corn kernels
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 tablespoon lime juice
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup crushed tortilla chips
Instructions
- In a large bowl, combine the cooked rice, black beans, corn, red onion, cilantro, lime juice, cumin, chili powder, and salt.
- Lay out the flour tortillas and divide the rice mixture evenly among them, spreading it out in the center of each tortilla.
- Sprinkle the shredded cheddar cheese and crushed tortilla chips over the rice mixture.
- Fold the sides of the tortillas in towards the center, then roll them up tightly from the bottom.
- Heat a large skillet over medium heat. Place the wraps seam-side down in the skillet and cook for 2-3 minutes on each side, until the tortillas are golden brown and crispy.
- Serve hot, garnished with additional cilantro and lime wedges if desired.
