Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 4 (8 oz) packages cream cheese, softened
  • 1 1/4 cups sugar
  • 1 tsp vanilla extract
  • 4 eggs
  • 1/3 cup heavy cream

Instructions

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  • In a large bowl, beat cream cheese, 1 1/4 cups sugar, and vanilla extract until smooth. Beat in eggs one at a time, mixing well after each addition. Stir in heavy cream.
  • Pour mixture into prepared crust.
  • Bake for 55 to 60 minutes, or until center is almost set. Cool on wire rack, then refrigerate for at least 4 hours before serving.
