Ingredients
- 1 cup couscous
- 1 1/2 cups vegetable broth
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 carrot, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- In a medium saucepan, bring the vegetable broth to a boil.
- Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff the couscous with a fork and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the bell pepper, zucchini, and carrot. Cook for another 5 minutes, until the vegetables are tender.
- Add the cherry tomatoes, parsley, and mint. Cook for 2 minutes, until the tomatoes are slightly softened.
- Stir in the cooked couscous and lemon juice. Season with salt and pepper to taste.
- Cook for an additional 2 minutes, until everything is heated through.
- Serve hot and enjoy!
