Ingredients

  • 1 cup couscous
  • 1 1/2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 carrot, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  • In a medium saucepan, bring the vegetable broth to a boil.
  • Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes.
  • Fluff the couscous with a fork and set aside.
  • In a large skillet, heat the olive oil over medium heat.
  • Add the onion and garlic and cook until softened, about 5 minutes.
  • Add the bell pepper, zucchini, and carrot. Cook for another 5 minutes, until the vegetables are tender.
  • Add the cherry tomatoes, parsley, and mint. Cook for 2 minutes, until the tomatoes are slightly softened.
  • Stir in the cooked couscous and lemon juice. Season with salt and pepper to taste.
  • Cook for an additional 2 minutes, until everything is heated through.
  • Serve hot and enjoy!
