Ingredients
- 1 cup cottage cheese
- 1/4 cup honey
- 2 eggs
- 1/4 cup vegetable oil
- 1 1/2 cups whole wheat flour
- 1/2 cup oat bran
- 1/4 cup wheat germ
- 1 tablespoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- In a large bowl, mix together cottage cheese, honey, eggs, and vegetable oil.
- In a separate bowl, combine whole wheat flour, oat bran, wheat germ, baking powder, and salt.
- Stir dry ingredients into cottage cheese mixture until just blended.
- Pour batter into prepared pan.
- Bake for 45 to 50 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Cool in pan for 10 minutes before removing to a wire rack to cool completely.
