Ingredients

  • 1 whole chicken, cut into pieces
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 cup milk
  • 1/4 cup half and half

Directions

  1. 1

Heat olive oil in a large pot over medium-high heat. Add chicken pieces and brown on all sides. Remove and set aside.

  2. 2

In the same pot, sauté onion, carrots, and celery until softened, about 5 minutes. Add garlic and cook for another minute.

  3. 3

Return chicken to the pot, add chicken broth and bay leaf. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.

  4. 4

In a bowl, mix flour, baking powder, and salt. Stir in melted butter, milk, and half and half to form a dough.

  5. 5

Drop spoonfuls of dough into the simmering broth. Cover and cook for 15 minutes until dumplings are fluffy and cooked through.

  6. 6

Remove bay leaf and serve hot.

Chef's tip

For added flavor, consider adding a splash of hot sauce or Worcestershire sauce to the broth. Use a silicone spatula to scrape any browned bits from the pot after browning the chicken for additional depth of flavor.
