Ingredients
- 1 cup of rice
- 1 tablespoon of vegetable oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 carrot, sliced
- 1 bell pepper, diced
- 1 cup of broccoli florets
- 1 cup of snap peas
- 1 cup of tofu, cubed
- 2 tablespoons of soy sauce
- 1 tablespoon of hoisin sauce
- 1 teaspoon of sesame oil
- 1 teaspoon of cornstarch
- 1/4 cup of water
- Salt and pepper to taste
Instructions
- Cook the rice according to package instructions.
- In a large skillet, heat the vegetable oil over medium heat.
- Add the onion and garlic to the skillet and cook until softened.
- Add the carrot, bell pepper, broccoli, and snap peas to the skillet and cook until tender-crisp.
- Push the vegetables to one side of the skillet and add the tofu to the other side.
- Cook the tofu until browned on all sides.
- In a small bowl, whisk together the soy sauce, hoisin sauce, sesame oil, cornstarch, and water.
- Pour the sauce over the vegetables and tofu in the skillet.
- Cook for an additional 2-3 minutes, or until the sauce has thickened.
- Season with salt and pepper to taste.
- Serve the stir-fry over the cooked rice.
