Ingredients

  • 1 cup of rice
  • 1 tablespoon of vegetable oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 carrot, sliced
  • 1 bell pepper, diced
  • 1 cup of broccoli florets
  • 1 cup of snap peas
  • 1 cup of tofu, cubed
  • 2 tablespoons of soy sauce
  • 1 tablespoon of hoisin sauce
  • 1 teaspoon of sesame oil
  • 1 teaspoon of cornstarch
  • 1/4 cup of water
  • Salt and pepper to taste

Instructions

  • Cook the rice according to package instructions.
  • In a large skillet, heat the vegetable oil over medium heat.
  • Add the onion and garlic to the skillet and cook until softened.
  • Add the carrot, bell pepper, broccoli, and snap peas to the skillet and cook until tender-crisp.
  • Push the vegetables to one side of the skillet and add the tofu to the other side.
  • Cook the tofu until browned on all sides.
  • In a small bowl, whisk together the soy sauce, hoisin sauce, sesame oil, cornstarch, and water.
  • Pour the sauce over the vegetables and tofu in the skillet.
  • Cook for an additional 2-3 minutes, or until the sauce has thickened.
  • Season with salt and pepper to taste.
  • Serve the stir-fry over the cooked rice.
