Ingredients

  • 2 large potatoes, peeled and diced
  • 1 onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 carrot, thinly sliced
  • 1 cup of snap peas
  • 2 tablespoons of soy sauce
  • 1 tablespoon of oyster sauce
  • 1 teaspoon of sesame oil
  • 1 teaspoon of cornstarch
  • 1/2 cup of vegetable broth
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste

Instructions

  • In a large pan, heat the vegetable oil over medium heat.
  • Add the onions and garlic to the pan and sauté until they become translucent.
  • Add the potatoes to the pan and cook until they start to brown.
  • Add the bell peppers, carrot, and snap peas to the pan and cook for an additional 5 minutes.
  • In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, cornstarch, and vegetable broth.
  • Pour the sauce mixture over the vegetables in the pan and stir to coat.
  • Cover the pan and let the dish simmer for about 10 minutes, or until the potatoes are tender.
  • Season with salt and pepper to taste.
