Ingredients
- 2 large potatoes, peeled and diced
- 1 onion, thinly sliced
- 2 cloves of garlic, minced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 carrot, thinly sliced
- 1 cup of snap peas
- 2 tablespoons of soy sauce
- 1 tablespoon of oyster sauce
- 1 teaspoon of sesame oil
- 1 teaspoon of cornstarch
- 1/2 cup of vegetable broth
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
Instructions
- In a large pan, heat the vegetable oil over medium heat.
- Add the onions and garlic to the pan and sauté until they become translucent.
- Add the potatoes to the pan and cook until they start to brown.
- Add the bell peppers, carrot, and snap peas to the pan and cook for an additional 5 minutes.
- In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, cornstarch, and vegetable broth.
- Pour the sauce mixture over the vegetables in the pan and stir to coat.
- Cover the pan and let the dish simmer for about 10 minutes, or until the potatoes are tender.
- Season with salt and pepper to taste.
