Ingredients

  • 2 cups cooked rice
  • 1 cup diced chicken
  • 1 cup diced vegetables (carrots, bell peppers, broccoli)
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup green onions, chopped
  • 1/4 cup cashews, chopped

Instructions

  • In a large skillet, heat sesame oil over medium heat.
  • Add garlic and ginger, and sauté until fragrant.
  • Add chicken and cook until browned.
  • Add vegetables and cook until tender.
  • In a small bowl, whisk together soy sauce, oyster sauce, and red pepper flakes.
  • Pour sauce over chicken and vegetables, and stir to coat.
  • Add cooked rice to the skillet, and stir until well combined.
  • Cook for an additional 2-3 minutes, until heated through.
  • Garnish with green onions and cashews before serving.
