Ingredients
- 8 oz Chinese egg noodles
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 small onion, thinly sliced
- 1 carrot, julienned
- 1 bell pepper, thinly sliced
- 1 cup cabbage, shredded
- 2 tbsp low-sodium soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1/2 tsp sugar
- 1/4 tsp white pepper
- 2 tbsp hot chicken stock or water
- Green onions, chopped (for garnish)
Directions
- 1
Cook the noodles according to package instructions until al dente. Drain and rinse with cool water, then set aside.
- 2
Heat the vegetable oil in a large pan or wok over medium-high heat.
- 3
Add minced garlic and sliced onion to the pan. Stir-fry for 1-2 minutes until fragrant.
- 4
Add the julienned carrot, sliced bell pepper, and shredded cabbage. Stir-fry for 2-3 minutes until vegetables are slightly tender.
- 5
Push the vegetables to one side of the pan and add the cooked noodles to the other side.
- 6
In a small bowl, mix soy sauce, oyster sauce, sesame oil, sugar, white pepper, and hot chicken stock or water. Pour over the noodles and vegetables.
- 7
Toss to combine, ensuring the noodles are coated and heated through, about 2 more minutes.
- 8
Garnish with chopped green onions and serve hot.
Chef's tip
Ensure that the noodles are not overcooked during the boiling process. Rinsing them with cool water helps prevent sticking and maintains their springy texture. Adjust the seasoning by adding more soy sauce or oyster sauce depending on your taste preference.
