Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 2 cans diced tomatoes
- 1 can kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper, to taste
- Shredded cheddar cheese, for serving
- Sour cream, for serving
- Chopped fresh cilantro, for serving
Instructions
- In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned, breaking it up with a wooden spoon as it cooks.
- Add the onion, bell pepper, and garlic to the pot and cook until softened, about 5 minutes.
- Stir in the diced tomatoes (with their juices), kidney beans, black beans, corn, chili powder, cumin, paprika, cayenne pepper, salt, and pepper.
- Bring the chili to a simmer and let it cook for 20-30 minutes, stirring occasionally, until the flavors have melded together and the chili has thickened slightly.
- Serve the chili hot, topped with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of chopped cilantro.
