Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 cans diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper, to taste
  • Shredded cheddar cheese, for serving
  • Sour cream, for serving
  • Chopped fresh cilantro, for serving

Instructions

  • In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned, breaking it up with a wooden spoon as it cooks.
  • Add the onion, bell pepper, and garlic to the pot and cook until softened, about 5 minutes.
  • Stir in the diced tomatoes (with their juices), kidney beans, black beans, corn, chili powder, cumin, paprika, cayenne pepper, salt, and pepper.
  • Bring the chili to a simmer and let it cook for 20-30 minutes, stirring occasionally, until the flavors have melded together and the chili has thickened slightly.
  • Serve the chili hot, topped with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of chopped cilantro.
