Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 carrot, chopped
  • 1 zucchini, chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz whole wheat noodles

Instructions

  • In a large pot, sauté onion and garlic until fragrant.
  • Add red bell pepper, carrot, and zucchini. Cook until vegetables are tender.
  • Add chickpeas, diced tomatoes, vegetable broth, oregano, basil, salt, and black pepper. Bring to a boil.
  • Reduce heat and simmer for 15 minutes.
  • Add noodles and cook until tender.
  • Serve hot.
