Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1/2 cucumber, sliced into quarter-moons
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh lemon juice
  • 1/4 cup extra-virgin olive oil
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1/2 cup Kalamata olives, halved
  • 1/2 cup crumbled feta cheese

Directions

    Combine chickpeas, red bell pepper, red onion, cucumber, olives, parsley, and mint in a large bowl.
