Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • 1/2 cup vegetable broth
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Heat the olive oil in a large skillet over medium heat.
  • Add the onion and garlic and sauté until softened, about 5 minutes.
  • Add the cumin, coriander, turmeric, and cayenne pepper and cook for another minute.
  • Add the chickpeas and vegetable broth and bring to a simmer.
