Ingredients
- 1 can chickpeas, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 1/2 cup vegetable broth
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and sauté until softened, about 5 minutes.
- Add the cumin, coriander, turmeric, and cayenne pepper and cook for another minute.
- Add the chickpeas and vegetable broth and bring to a simmer.
- Reduce the heat to low and let simmer for 10-15 minutes, until the chickpeas are tender and the sauce has thickened.
- Season with salt and pepper to taste.
- Serve hot with rice or naan bread.
