This salad is a delicious and healthy twist on the classic Caesar salad. It's packed with protein and fiber from the chickpeas and chicken, and the homemade dressing is light and flavorful.

Ingredients
- 2 boneless, skinless chicken breasts
- 1 can chickpeas, drained and rinsed
- 1 head romaine lettuce, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
- 1/4 cup croutons
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F.
- Season chicken breasts with salt and pepper, and bake for 25-30 minutes, or until cooked through.
- While chicken is cooking, make the dressing by whisking together olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper.
- In a large bowl, combine chickpeas, lettuce, cherry tomatoes, Parmesan cheese, and croutons.
- Once chicken is cooked, let it cool for a few minutes before slicing it into strips.
- Add chicken to the salad, and toss with the dressing.
- Serve immediately.
