Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 can chickpeas, drained and rinsed
  • 1 head romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup croutons
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  • Preheat oven to 375°F.
  • Season chicken breasts with salt and pepper, and bake for 25-30 minutes, or until cooked through.
  • While chicken is cooking, make the dressing by whisking together olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper.
  • In a large bowl, combine chickpeas, lettuce, cherry tomatoes, Parmesan cheese, and croutons.
  • Once chicken is cooked, let it cool for a few minutes before slicing it into strips.
  • Add chicken to the salad, and toss with the dressing.
  • Serve immediately.
