Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup broccoli florets
- 1 cup sliced bell peppers
- 1 cup sliced carrots
- 1 cup snap peas
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- 1. Preheat the oven to 400°F (200°C).
- 2. Season the chicken breasts with salt and pepper.
- 3. Heat the olive oil in a large skillet over medium heat.
- 4. Add the chicken breasts and cook for 5-6 minutes per side, or until cooked through.
- 5. Remove the chicken from the skillet and set aside.
- 6. In the same skillet, add the minced garlic and cook for 1 minute.
- 7. Add the broccoli, bell peppers, carrots, and snap peas to the skillet.
- 8. Cook for 5-6 minutes, or until the vegetables are tender-crisp.
- 9. Stir in the soy sauce and cook for an additional 2 minutes.
- 10. Slice the cooked chicken breasts and add them back to the skillet.
- 11. Stir everything together and cook for another 2 minutes to heat through.
- 12. Serve the chicken veggie delight over rice or noodles.
