Ingredients
- 2 pounds chicken thighs, boneless and skinless
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- 4 cups chicken broth
- 1 cup frozen peas
- Salt and pepper to taste
Instructions
- 1. In a large pot, heat some oil over medium heat.
- 2. Add the chicken thighs and cook until browned on all sides. Remove from the pot and set aside.
- 3. In the same pot, add the onion, carrots, celery, and garlic. Cook until the vegetables are softened.
- 4. Add the dried thyme, dried rosemary, and bay leaf. Stir to combine.
- 5. Return the chicken thighs to the pot and pour in the chicken broth. Bring to a boil.
- 6. Reduce heat to low, cover, and simmer for 30 minutes.
- 7. Remove the chicken thighs from the pot and shred the meat. Discard the bones.
- 8. Return the shredded chicken to the pot and add the frozen peas. Cook for an additional 5 minutes.
- 9. Season with salt and pepper to taste.
- 10. Serve hot and enjoy!
