Ingredients

  • 2 pounds chicken thighs, boneless and skinless
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 4 cups chicken broth
  • 1 cup frozen peas
  • Salt and pepper to taste

Instructions

  • 1. In a large pot, heat some oil over medium heat.
  • 2. Add the chicken thighs and cook until browned on all sides. Remove from the pot and set aside.
  • 3. In the same pot, add the onion, carrots, celery, and garlic. Cook until the vegetables are softened.
  • 4. Add the dried thyme, dried rosemary, and bay leaf. Stir to combine.
  • 5. Return the chicken thighs to the pot and pour in the chicken broth. Bring to a boil.
  • 6. Reduce heat to low, cover, and simmer for 30 minutes.
  • 7. Remove the chicken thighs from the pot and shred the meat. Discard the bones.
  • 8. Return the shredded chicken to the pot and add the frozen peas. Cook for an additional 5 minutes.
  • 9. Season with salt and pepper to taste.
  • 10. Serve hot and enjoy!
