Packed with tender chicken, a medley of vegetables, and a savory blend of herbs, this dish is perfect for warming you up on a chilly day. Inspired by time-tested techniques and updated with contemporary best practices, it’s flavorful, nutritious, and easy to prepare.

Ingredients

  • 1.5 pounds boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 4 cups low-sodium chicken broth
  • 1 cup frozen peas
  • 1 cup potatoes, peeled and chopped
  • 1 tablespoon all-purpose flour
  • Salt and pepper to taste

Directions

  1. 1

Heat olive oil in a large pot over medium-high heat.

  2. 2

Pat chicken dry, season with salt and pepper, and brown in the pot, about 5 minutes each side. Remove and set aside.

  3. 3

Add onion, carrots, and celery to the same pot; sauté until softened, about 5 minutes.

  4. 4

Stir in garlic, thyme, rosemary, and bay leaf; cook for 1 minute.

  5. 5

Sprinkle flour over vegetables and stir to coat.

  6. 6

Return chicken to pot, add broth and potatoes; stir well.

  7. 7

Bring to a boil, then reduce heat to simmer, cover, and cook for 30 minutes.

  8. 8

Stir in peas and continue to cook until chicken is tender and flavors blend, about 5 minutes more. Season with salt and pepper to taste.

Chef's tip

For an extra depth of flavor, consider browning the chicken in batches and deglazing the pot with a splash of white wine before adding the broth.
