  • 4 large potatoes, peeled and diced

  • 1/2 cup heavy cream

  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley
