Ingredients
- 500g chicken livers
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 100g butter
- 2 tablespoons brandy
- 1 teaspoon thyme leaves
- Salt and pepper to taste
Instructions
- In a large frying pan, melt half of the butter over medium heat.
- Add the chopped onion and minced garlic to the pan and cook until softened.
- Add the chicken livers to the pan and cook until browned on the outside but still slightly pink on the inside.
- Remove the pan from the heat and let the livers cool slightly.
- Transfer the livers, onions, and garlic to a food processor and blend until smooth.
- Add the remaining butter, brandy, thyme leaves, salt, and pepper to the food processor and blend until well combined.
- Taste and adjust the seasoning if necessary.
- Transfer the mixture to a serving dish or individual ramekins.
- Cover with plastic wrap and refrigerate for at least 2 hours, or until set.
- Serve chilled with toast or crackers.
