- 500g chicken livers
- 120g unsalted butter, divided
- 1 shallot, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons brandy or port
- 1 teaspoon thyme leaves
- 60ml heavy cream
- Salt and pepper to taste
