Ingredients

  • 500g chicken livers
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 100g butter
  • 2 tablespoons brandy
  • 1 teaspoon thyme leaves
  • Salt and pepper to taste

Instructions

  • In a large frying pan, melt half of the butter over medium heat.
  • Add the chopped onion and minced garlic to the pan and cook until softened.
  • Add the chicken livers to the pan and cook until browned on the outside but still slightly pink on the inside.
  • Remove the pan from the heat and let the livers cool slightly.
  • Transfer the livers, onions, and garlic to a food processor and blend until smooth.
  • Add the remaining butter, brandy, thyme leaves, salt, and pepper to the food processor and blend until well combined.
  • Taste and adjust the seasoning if necessary.
  • Transfer the mixture to a serving dish or individual ramekins.
  • Cover with plastic wrap and refrigerate for at least 2 hours, or until set.
  • Serve chilled with toast or crackers.
