Ingredients

  • 500g chicken livers
  • 120g unsalted butter, divided
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons brandy or port
  • 1 teaspoon thyme leaves
  • 60ml heavy cream
  • Salt and pepper to taste

Directions

    Trim the chicken livers by removing any white connective tissue.
