Ingredients

  • 2 lbs chicken feet, nails removed and cleaned
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 bell pepper, sliced
  • 1 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 1 tsp black pepper
  • 3 slices ginger
  • 2 stalks scallions, white part only
  • 1 tbsp fermented black soybeans
  • 2 tbsp oyster sauce
  • 2 tbsp Shaoxing wine
  • 2 bay leaves
  • 4 cups water
  • 2 tbsp oil

Directions

    Clean and trim the chicken feet, removing nails and any excess skin.

    Blanch chicken feet with ginger, scallions, Shaoxing wine, and water for 5 minutes. Drain and rinse.

    In a pot, sauté garlic, onion, and bell pepper in oil until fragrant.

    Add chicken feet and brown on all sides.

    Pour in soy sauce, rice vinegar, brown sugar, oyster sauce, black pepper, fermented black soybeans, and water. Stir well.

    Add bay leaves and bring the mixture to a boil.

    Reduce heat to low, cover, and simmer for 1 hour or until chicken feet are tender.
