Ingredients

  • 2 pounds boneless, skinless chicken breasts, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (15 ounces) diced tomatoes
  • 1 can (6 ounces) tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups chicken broth
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  • In a large pot or Dutch oven, heat some oil over medium heat.
  • Add the diced chicken and cook until browned.
  • Remove the chicken from the pot and set aside.
  • In the same pot, add the diced onion, minced garlic, and diced bell pepper.
  • Cook until the vegetables are softened.
  • Add the black beans, kidney beans, corn, diced tomatoes, tomato paste, chili powder, cumin, paprika, oregano, salt, and black pepper.
  • Stir to combine.
  • Return the cooked chicken to the pot.
  • Pour in the chicken broth and stir well.
  • Bring the chili to a simmer and let it cook for about 30 minutes, stirring occasionally.
  • Serve hot, garnished with chopped fresh cilantro.
