Ingredients
- 2 pounds boneless, skinless chicken breasts, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (15 ounces) diced tomatoes
- 1 can (6 ounces) tomato paste
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups chicken broth
- 1/4 cup chopped fresh cilantro, for garnish
Instructions
- In a large pot or Dutch oven, heat some oil over medium heat.
- Add the diced chicken and cook until browned.
- Remove the chicken from the pot and set aside.
- In the same pot, add the diced onion, minced garlic, and diced bell pepper.
- Cook until the vegetables are softened.
- Add the black beans, kidney beans, corn, diced tomatoes, tomato paste, chili powder, cumin, paprika, oregano, salt, and black pepper.
- Stir to combine.
- Return the cooked chicken to the pot.
- Pour in the chicken broth and stir well.
- Bring the chili to a simmer and let it cook for about 30 minutes, stirring occasionally.
- Serve hot, garnished with chopped fresh cilantro.
