Ingredients
- 4 chicken thighs
- 4 chicken drumsticks
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 can (14 ounces) diced tomatoes
- 1 can (6 ounces) tomato paste
- 1 cup chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup chopped fresh parsley
Instructions
- Season the chicken thighs and drumsticks with salt and pepper.
- Heat the olive oil in a large skillet over medium heat.
- Add the chicken pieces and cook until browned on all sides. Remove from the skillet and set aside.
- In the same skillet, add the chopped onion and minced garlic. Cook until the onion is translucent.
- Add the sliced bell peppers and cook for another 2 minutes.
- Stir in the diced tomatoes, tomato paste, chicken broth, dried oregano, dried basil, dried thyme, dried rosemary, and red pepper flakes (if using).
- Return the chicken pieces to the skillet and bring the mixture to a simmer.
- Cover and cook for 30-40 minutes, or until the chicken is cooked through and tender.
- Garnish with chopped fresh parsley before serving.
- Serve hot with pasta, rice, or crusty bread.
