Ingredients

  • 4 chicken thighs
  • 4 chicken drumsticks
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 can (14 ounces) diced tomatoes
  • 1 can (6 ounces) tomato paste
  • 1 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup chopped fresh parsley

Instructions

  • Season the chicken thighs and drumsticks with salt and pepper.
  • Heat the olive oil in a large skillet over medium heat.
  • Add the chicken pieces and cook until browned on all sides. Remove from the skillet and set aside.
  • In the same skillet, add the chopped onion and minced garlic. Cook until the onion is translucent.
  • Add the sliced bell peppers and cook for another 2 minutes.
  • Stir in the diced tomatoes, tomato paste, chicken broth, dried oregano, dried basil, dried thyme, dried rosemary, and red pepper flakes (if using).
  • Return the chicken pieces to the skillet and bring the mixture to a simmer.
  • Cover and cook for 30-40 minutes, or until the chicken is cooked through and tender.
  • Garnish with chopped fresh parsley before serving.
  • Serve hot with pasta, rice, or crusty bread.
