Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup diced onions
  • 1/4 cup chopped cilantro
  • 1/4 cup sour cream
  • 1/4 cup shredded cheese
  • 1/4 cup salsa

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a small bowl, combine the chili powder, cumin, garlic powder, onion powder, paprika, salt, and black pepper.
  • Rub the spice mixture all over the chicken breasts.
  • Heat the olive oil in a large skillet over medium heat.
  • Add the chicken breasts and cook for 6-8 minutes per side, or until cooked through.
  • Remove the chicken from the skillet and let it rest for a few minutes.
  • Slice the chicken into thin strips.
  • Place the flour tortillas on a baking sheet and warm them in the oven for 2-3 minutes.
  • Remove the tortillas from the oven.
  • Spread a spoonful of cooked rice onto each tortilla.
  • Top the rice with black beans, shredded lettuce, diced tomatoes, diced onions, chopped cilantro, sour cream, shredded cheese, and salsa.
  • Add the sliced chicken on top of the other ingredients.
  • Fold the sides of the tortilla over the filling, then roll it up tightly.
  • Serve the chicken burritos warm.
