Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large flour tortillas
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup diced onions
- 1/4 cup chopped cilantro
- 1/4 cup sour cream
- 1/4 cup shredded cheese
- 1/4 cup salsa
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, combine the chili powder, cumin, garlic powder, onion powder, paprika, salt, and black pepper.
- Rub the spice mixture all over the chicken breasts.
- Heat the olive oil in a large skillet over medium heat.
- Add the chicken breasts and cook for 6-8 minutes per side, or until cooked through.
- Remove the chicken from the skillet and let it rest for a few minutes.
- Slice the chicken into thin strips.
- Place the flour tortillas on a baking sheet and warm them in the oven for 2-3 minutes.
- Remove the tortillas from the oven.
- Spread a spoonful of cooked rice onto each tortilla.
- Top the rice with black beans, shredded lettuce, diced tomatoes, diced onions, chopped cilantro, sour cream, shredded cheese, and salsa.
- Add the sliced chicken on top of the other ingredients.
- Fold the sides of the tortilla over the filling, then roll it up tightly.
- Serve the chicken burritos warm.
