- 2 cups basmati rice
- 1 lb chicken, cut into pieces
- 1 large onion, thinly sliced
- 1/2 cup plain yogurt
- 2 tbsp biryani masala
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint leaves
- 1/4 cup fried onions
- 4 cups water
- Salt to taste
- 2 tbsp ghee
- 1 tbsp lemon juice

Rinse the basmati rice until the water runs clear. Soak the rice in water for 30 minutes, then drain.

In a bowl, marinate the chicken with yogurt, biryani masala, turmeric powder, red chili powder, salt, and lemon juice. Let it sit for 1 hour or overnight for best results.

Heat ghee in a large pot and fry the sliced onions until golden brown. Remove half and set aside.

Add the marinated chicken to the pot and cook until browned.

Parboil the soaked rice in boiling water for about 5 minutes, then drain.
