Ingredients
- 2 boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400°F.
- In a large bowl, combine the sliced peppers, zucchini, squash, onion, and garlic. Drizzle with olive oil and sprinkle with oregano, salt, and pepper. Toss to coat.
