Ingredients
- 4 boneless, skinless chicken breasts
- 1 lb baby potatoes, halved
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1/2 cup chicken broth
- 2 tbsp chopped fresh dill
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 5-6 minutes per side, or until browned and cooked through. Remove from the skillet and set aside.
- Add the potatoes, onion, and garlic to the skillet. Cook for 5-7 minutes, or until the potatoes are tender and the onion is translucent.
- Add the diced tomatoes, chicken broth, and chopped dill to the skillet. Stir to combine, then bring to a simmer.
- Return the chicken breasts to the skillet, nestling them into the tomato-dill sauce. Cover and simmer for 10-15 minutes, or until the sauce has thickened and the chicken is heated through.
- Serve hot, garnished with additional chopped dill if desired.
