Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup chicken broth
  • 2 tbsp chopped fresh dill
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  • Heat the olive oil in a large skillet over medium-high heat.
  • Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 5-6 minutes per side, or until browned and cooked through. Remove from the skillet and set aside.
  • Add the potatoes, onion, and garlic to the skillet. Cook for 5-7 minutes, or until the potatoes are tender and the onion is translucent.
  • Add the diced tomatoes, chicken broth, and chopped dill to the skillet. Stir to combine, then bring to a simmer.
  • Return the chicken breasts to the skillet, nestling them into the tomato-dill sauce. Cover and simmer for 10-15 minutes, or until the sauce has thickened and the chicken is heated through.
  • Serve hot, garnished with additional chopped dill if desired.
