Chewy Anzac Biscuits

About this recipe

Transport yourself to the land down under with these chewy Anzac biscuits. Made with oats, coconut, and golden syrup, these biscuits offer a sweet, nutty flavor perfect for afternoon tea. Their chewy center and crispy edges make them a favorite for any occasion.

Ingredients

  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 1 cup all-purpose flour
  • 3/4 cup caster sugar
  • 1/4 cup brown sugar
  • 150g unsalted butter
  • 2 tablespoons golden syrup
  • 1/2 teaspoon baking soda
  • 2 tablespoons boiling water

Directions

  1. 1

Preheat your oven to 350°F (180°C) and line two baking trays with parchment paper.

  2. 2

In a large mixing bowl, combine the rolled oats, desiccated coconut, all-purpose flour, caster sugar, and brown sugar.

  3. 3

In a small saucepan, melt the unsalted butter and golden syrup over medium-low heat until smooth.

  4. 4

Dissolve the baking soda in boiling water, then stir it into the melted butter mixture, allowing it to fizz.

  5. 5

Pour the butter mixture into the dry ingredients and stir until just combined. The mixture should be crumbly but hold together when pressed.

  6. 6

Shape tablespoonfuls of the mixture into balls, place them on the baking trays, and flatten slightly.

  7. 7

Bake for 12 minutes or until the biscuits are golden brown. Swap the trays halfway through for even baking.

  8. 8

Cool on the trays for 5 minutes before transferring to a wire rack to cool completely.

Chef's tip

For an extra chewy center, reduce the cooking time by 1-2 minutes.
