- 1 cup rolled oats
- 1 cup desiccated coconut
- 1 cup all-purpose flour
- 1 cup brown sugar
- 1/2 cup unsalted butter, melted
- 2 tablespoons golden syrup
- 1/2 teaspoon baking soda
- 2 tablespoons boiling water
Instructions
- Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, desiccated coconut, all-purpose flour, and brown sugar.
- In a small saucepan, melt the unsalted butter and golden syrup over low heat.
- In a separate small bowl, dissolve the baking soda in boiling water, then add it to the melted butter mixture.
- Pour the melted butter mixture into the dry ingredients and mix until well combined.
- Roll tablespoonfuls of the mixture into balls and place them onto the prepared baking sheet, leaving some space between each ball.
