- 1 cup desiccated coconut
- 1 cup all-purpose flour
- 3/4 cup caster sugar
- 1/4 cup brown sugar
- 150g unsalted butter
- 2 tablespoons golden syrup
- 1/2 teaspoon baking soda
- 2 tablespoons boiling water

Preheat your oven to 350°F (180°C) and line two baking trays with parchment paper.

In a large mixing bowl, combine the rolled oats, desiccated coconut, all-purpose flour, caster sugar, and brown sugar.

In a small saucepan, melt the unsalted butter and golden syrup over medium-low heat until smooth.

Dissolve the baking soda in boiling water, then stir it into the melted butter mixture, allowing it to fizz.
