Ingredients
- 1 pound pasta
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- Salt and pepper, to taste
Instructions
- Cook pasta according to package instructions.
- While pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add onion and garlic and cook until softened, about 5 minutes.
- Add bell peppers and zucchini and cook until vegetables are tender, about 10 minutes.
- Add cherry tomatoes and cook for an additional 5 minutes.
- In a small saucepan, heat Parmesan cheese and heavy cream over low heat until cheese is melted and sauce is smooth.
- Drain pasta and add to skillet with vegetables.
- Pour cheese sauce over pasta and vegetables and toss to combine.
- Season with salt and pepper, to taste.
- Serve hot.
