Ingredients

  • 1 pound pasta
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • Salt and pepper, to taste

Instructions

  • Cook pasta according to package instructions.
  • While pasta is cooking, heat olive oil in a large skillet over medium heat.
  • Add onion and garlic and cook until softened, about 5 minutes.
  • Add bell peppers and zucchini and cook until vegetables are tender, about 10 minutes.
  • Add cherry tomatoes and cook for an additional 5 minutes.
  • In a small saucepan, heat Parmesan cheese and heavy cream over low heat until cheese is melted and sauce is smooth.
  • Drain pasta and add to skillet with vegetables.
  • Pour cheese sauce over pasta and vegetables and toss to combine.
  • Season with salt and pepper, to taste.
  • Serve hot.
