Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 8 ounces sliced mushrooms
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken breasts and cook until browned on both sides, about 3-4 minutes per side.
- Remove chicken from skillet and set aside.
- Add mushrooms and garlic to the skillet and cook until mushrooms are tender, about 5 minutes.
- Add chicken broth and heavy cream to the skillet and bring to a simmer.
- Stir in mozzarella cheese, Parmesan cheese, and dried thyme.
- Season with salt and pepper, to taste.
- Return chicken to the skillet and spoon sauce over the top.
