Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 4 large potatoes, peeled and sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup chicken broth
  • 1/2 cup milk
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  • Preheat the oven to 375°F.
  • In a large baking dish, layer the sliced potatoes on the bottom.
  • Season the chicken breasts with salt, pepper, and paprika, then place them on top of the potatoes.
  • In a mixing bowl, combine the chicken broth, milk, garlic, and half of the cheddar cheese. Pour this mixture over the chicken and potatoes.
  • Cover the dish with foil and bake for 45 minutes.
  • Remove the foil, sprinkle the remaining cheddar cheese and Parmesan cheese on top, and bake for an additional 15 minutes or until the cheese is melted and bubbly.
  • Garnish with chopped parsley before serving.
