Ingredients
- 2 lbs boneless, skinless chicken breasts
- 4 large potatoes, peeled and sliced
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 cup chicken broth
- 1/2 cup milk
- 2 cloves garlic, minced
- 1 tsp paprika
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Preheat the oven to 375°F.
- In a large baking dish, layer the sliced potatoes on the bottom.
- Season the chicken breasts with salt, pepper, and paprika, then place them on top of the potatoes.
- In a mixing bowl, combine the chicken broth, milk, garlic, and half of the cheddar cheese. Pour this mixture over the chicken and potatoes.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil, sprinkle the remaining cheddar cheese and Parmesan cheese on top, and bake for an additional 15 minutes or until the cheese is melted and bubbly.
- Garnish with chopped parsley before serving.
