About this recipe

This updated Cheesy Chicken and Potato Casserole combines tender chicken, creamy potatoes, and rich cheese to create a mouthwatering family meal. With simple ingredients and straightforward steps, it's an ideal choice for busy weeknights.

Ingredients

  • 2 lbs boneless skinless chicken breasts, cut into 1-inch pieces
  • 4 large potatoes, peeled and cut into 1-inch cubes
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Chopped fresh parsley for garnish

Directions

  1. 1

Preheat the oven to 400°F (200°C). Grease a 9x13-inch baking dish with non-stick spray.

  2. 2

Toss potatoes with 1 tablespoon olive oil, salt, and pepper. Spread evenly in the dish and bake for 20 minutes.

  3. 3

In a large bowl, mix chicken pieces with the remaining olive oil, paprika, garlic, salt, and pepper.

  4. 4

Remove the potatoes from the oven, add seasoned chicken on top, and return to bake for another 20 minutes.

  5. 5

In a separate bowl, whisk together chicken broth and sour cream. Pour over chicken and potatoes.

  6. 6

Sprinkle cheddar and Parmesan cheese over the top, and bake for another 15 minutes, until bubbly and golden.

  7. 7

Let stand for 5 minutes before garnishing with parsley and serving.

Chef's tip

Use a blend of cheddar and mozzarella for a varied flavor. Consider adding cooked bacon or green onions for extra taste and texture.
