Ingredients
- 2 lbs chicken thighs, bone-in
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cups diced tomatoes
- 1 cup chicken broth
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp coriander
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- 1. Heat olive oil in a large pot over medium heat.
- 2. Add chicken thighs and brown on all sides, then remove from pot and set aside.
- 3. In the same pot, add onion, garlic, and bell peppers. Cook until softened.
- 4. Stir in diced tomatoes, chicken broth, paprika, cayenne pepper, coriander, salt, and pepper.
- 5. Return chicken thighs to the pot and bring to a simmer. Cover and cook for 30 minutes.
- 6. Remove lid and continue to cook for an additional 15 minutes, or until chicken is cooked through and tender.
- 7. Garnish with fresh parsley before serving.
