Ingredients

  • 2 lbs chicken thighs, bone-in
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cups diced tomatoes
  • 1 cup chicken broth
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp coriander
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add chicken thighs and brown on all sides, then remove from pot and set aside.
  • 3. In the same pot, add onion, garlic, and bell peppers. Cook until softened.
  • 4. Stir in diced tomatoes, chicken broth, paprika, cayenne pepper, coriander, salt, and pepper.
  • 5. Return chicken thighs to the pot and bring to a simmer. Cover and cook for 30 minutes.
  • 6. Remove lid and continue to cook for an additional 15 minutes, or until chicken is cooked through and tender.
  • 7. Garnish with fresh parsley before serving.
