Ingredients

  • 4 large bell peppers
  • 1 lb ground turkey
  • 1 cup cooked quinoa
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • Fresh cilantro for garnish

Instructions

  • Preheat the oven to 375°F.
  • Cut the tops off the bell peppers and remove the seeds and membranes.
  • In a large skillet, cook the ground turkey until browned. Add the cooked quinoa, black beans, corn, tomatoes, cumin, chili powder, garlic powder, salt, and pepper. Cook for another 5 minutes.
  • Stuff the bell peppers with the turkey mixture and place them in a baking dish. Top with shredded cheddar cheese.
