Ingredients
- 4 large bell peppers
- 1 lb ground turkey
- 1 cup cooked quinoa
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, cook the ground turkey until browned. Add the cooked quinoa, black beans, corn, tomatoes, cumin, chili powder, garlic powder, salt, and pepper. Cook for another 5 minutes.
- Stuff the bell peppers with the turkey mixture and place them in a baking dish. Top with shredded cheddar cheese.
- Cover the dish with foil and bake for 25-30 minutes, or until the peppers are tender.
- Garnish with fresh cilantro before serving.
