Ingredients

  • 1 head cauliflower, grated
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/4 teaspoon black pepper

Instructions

  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Add the onion and garlic and cook until softened, about 3 minutes.
  • Add the grated cauliflower and frozen peas and carrots and cook for 5-7 minutes, stirring occasionally.
  • Push the cauliflower mixture to one side of the skillet and add the beaten eggs to the other side.
  • Scramble the eggs until cooked through, then mix them into the cauliflower mixture.
  • Add the soy sauce, sesame oil, and black pepper and stir to combine.
  • Cook for an additional 2-3 minutes, until heated through.
  • Serve hot and enjoy!
