Ingredients
- 1 head cauliflower, grated
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1/4 teaspoon black pepper
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the onion and garlic and cook until softened, about 3 minutes.
- Add the grated cauliflower and frozen peas and carrots and cook for 5-7 minutes, stirring occasionally.
- Push the cauliflower mixture to one side of the skillet and add the beaten eggs to the other side.
- Scramble the eggs until cooked through, then mix them into the cauliflower mixture.
- Add the soy sauce, sesame oil, and black pepper and stir to combine.
- Cook for an additional 2-3 minutes, until heated through.
- Serve hot and enjoy!
