- 1 cup of rice
- 2 cups of water
- 1 tablespoon of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 carrots, peeled and chopped
- 1 cup of sliced mushrooms
- 1 teaspoon of dried thyme
- Salt and pepper to taste
Instructions
- In a medium saucepan, bring the water to a boil.
- Add the rice and stir. Reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the water is absorbed.
- In a large skillet, heat the olive oil over medium heat.
- Add the onion and garlic and sauté until the onion is translucent.
