Ingredients

  • 1 pound carrots, peeled and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup coconut milk
  • Salt and pepper, to taste

Directions

    Heat oil in a large pot over medium heat. Sauté the onion and garlic until softened.
