Ingredients

  • 2 cups of broccoli florets
  • 2 medium carrots, julienned
  • 1 block (14 oz) of firm tofu, pressed and cubed
  • 3 tablespoons soy sauce, low-sodium
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 tablespoon cornstarch
  • 1 teaspoon freshly grated ginger
  • 2 cloves garlic, minced
  • 1/4 cup vegetable broth
  • 1 tablespoon rice vinegar
  • 2 tablespoons water
  • Salt and pepper to taste
  • Optional garnish: chopped green onions and sesame seeds

Directions

    Whisk together soy sauce, sesame oil, cornstarch, ginger, garlic, vegetable broth, and rice vinegar to create the sauce.

    Heat olive oil in a large skillet over medium heat. Add tofu and cook until golden brown on all sides, about 6 minutes. Remove and set aside.

    In the same skillet, increase heat to medium-high. Add broccoli, carrots, and 2 tablespoons of water. Stir-fry until vegetables are tender-crisp, about 5 minutes.
