- 2 carrots, sliced
- 1 head of broccoli, cut into florets
- 1 cup of cooked rice
- 1 block of tofu, cubed
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 1 tablespoon of cornstarch
- 1 teaspoon of ginger, minced
- 2 cloves of garlic, minced
- 1/4 cup of vegetable broth
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together the soy sauce, sesame oil, cornstarch, ginger, garlic, and vegetable broth. Set aside.
- Heat the olive oil in a large skillet or wok over medium heat. Add the tofu and cook until golden brown on all sides. Remove from the skillet and set aside.
- In the same skillet, add the carrots and broccoli. Cook for 5-7 minutes, or until the vegetables are tender-crisp.
- Add the cooked rice and tofu to the skillet. Pour the sauce over the mixture and stir to combine.
- Cook for an additional 2-3 minutes, or until the sauce has thickened and everything is heated through.
- Season with salt and pepper to taste.
