Ingredients

  • 2 carrots, sliced
  • 1 head of broccoli, cut into florets
  • 1 cup of cooked rice
  • 1 block of tofu, cubed
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of cornstarch
  • 1 teaspoon of ginger, minced
  • 2 cloves of garlic, minced
  • 1/4 cup of vegetable broth
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together the soy sauce, sesame oil, cornstarch, ginger, garlic, and vegetable broth. Set aside.
  • Heat the olive oil in a large skillet or wok over medium heat. Add the tofu and cook until golden brown on all sides. Remove from the skillet and set aside.
  • In the same skillet, add the carrots and broccoli. Cook for 5-7 minutes, or until the vegetables are tender-crisp.
