  • 1 cup carob flour
  • 1/2 cup almond flour
  • 1/2 cup coconut oil
  • 1/2 cup erythritol
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  • Preheat the oven to 350°F.
  • In a mixing bowl, combine the carob flour, almond flour, baking powder, and salt.
  • In a separate bowl, beat the eggs and erythritol together until light and fluffy.
  • Add the coconut oil and vanilla extract to the egg mixture and mix well.
  • Add the dry ingredients to the wet ingredients and mix until well combined.
  • Pour the batter into a greased 8x8 inch baking dish.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool before slicing and serving.
