Ingredients
- 1 cup carob flour
- 1/2 cup almond flour
- 1/2 cup coconut oil
- 1/2 cup erythritol
- 2 eggs
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F.
- In a mixing bowl, combine the carob flour, almond flour, baking powder, and salt.
- In a separate bowl, beat the eggs and erythritol together until light and fluffy.
- Add the coconut oil and vanilla extract to the egg mixture and mix well.
- Add the dry ingredients to the wet ingredients and mix until well combined.
- Pour the batter into a greased 8x8 inch baking dish.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool before slicing and serving.
