Cancer-Fighting Quinoa Salad

About this recipe

This colorful and nutritious salad combines quinoa, kale, and vibrant berries to offer cancer-fighting properties in a delicious and easy-to-make dish. Perfect for a light lunch or a side, this salad is both healthy and satisfying.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 bunch kale, chopped
  • 1 cup blueberries
  • 1 cup strawberries, sliced
  • 1/4 cup sliced almonds
  • 1/4 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Directions

  1. 1

Rinse the quinoa thoroughly under cold water.

  2. 2

In a medium pot, combine quinoa and water. Bring to a boil, then cover and reduce heat to low. Simmer until the water is absorbed and quinoa is tender, about 15-20 minutes.

  3. 3

In a large mixing bowl, combine the cooked quinoa, kale, blueberries, strawberries, almonds, and feta cheese.

  4. 4

In a separate small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper for the dressing.

  5. 5

Pour the dressing over the quinoa mixture and toss well to combine.

  6. 6

Serve immediately or chill in the refrigerator for up to 2 hours before serving.

Chef's tip

For added variety, try substituting spinach for kale or adding a sprinkle of chopped walnuts.
