Ingredients

  • 1 lb. boneless, skinless chicken breast
  • 1 cup quinoa
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 small onion
  • 2 cloves garlic
  • 1 tbsp. olive oil
  • 1 tsp. paprika
  • 1 tsp. cumin
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  • Preheat oven to 375°F.
  • Cook quinoa according to package instructions.
  • Meanwhile, chop bell peppers and onion into bite-sized pieces.
  • Mince garlic.
  • Heat olive oil in a large skillet over medium heat.
  • Add chicken and cook until browned on both sides, about 5 minutes per side.
  • Remove chicken from skillet and set aside.
  • Add bell peppers, onion, and garlic to skillet and cook until vegetables are tender, about 5 minutes.
  • Stir in paprika, cumin, salt, and black pepper.
  • Add cooked quinoa to skillet and stir to combine.
  • Transfer quinoa mixture to a baking dish.
  • Top with chicken and bake for 20-25 minutes, until chicken is cooked through.
