Ingredients
- 1 lb. boneless, skinless chicken breast
- 1 cup quinoa
- 1 red bell pepper
- 1 yellow bell pepper
- 1 small onion
- 2 cloves garlic
- 1 tbsp. olive oil
- 1 tsp. paprika
- 1 tsp. cumin
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 375°F.
- Cook quinoa according to package instructions.
- Meanwhile, chop bell peppers and onion into bite-sized pieces.
- Mince garlic.
- Heat olive oil in a large skillet over medium heat.
- Add chicken and cook until browned on both sides, about 5 minutes per side.
- Remove chicken from skillet and set aside.
- Add bell peppers, onion, and garlic to skillet and cook until vegetables are tender, about 5 minutes.
- Stir in paprika, cumin, salt, and black pepper.
- Add cooked quinoa to skillet and stir to combine.
- Transfer quinoa mixture to a baking dish.
- Top with chicken and bake for 20-25 minutes, until chicken is cooked through.
- Garnish with chopped parsley before serving.
