About this recipe

Elevate your breakfast with these cake-style protein pop tarts, combining a rich, protein-packed dough with a sweet, sugar-free jam filling. These pop tarts are perfect for a nutritious start to your day or a protein-rich snack.

Ingredients

  • 1 cup almond flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup coconut flour
  • 1/4 cup granulated sweetener
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup sugar-free jam

Directions

  1. 1

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. 2

In a large bowl, whisk together almond flour, protein powder, coconut flour, sweetener, baking powder, and salt.

  3. 3

Stir in applesauce, almond milk, egg, and vanilla extract until a dough forms.

  4. 4

Divide the dough into two pieces and roll each into rectangles about 1/4 inch thick between two sheets of parchment paper.

  5. 5

Spread jam on one rectangle, leaving a small border, and place the other rectangle on top. Press edges to seal.

  6. 6

Cut into 8 equal pieces and transfer to the prepared baking sheet.

  7. 7

Bake for 15 minutes or until golden brown.

  8. 8

Let cool on a wire rack before serving.

Chef's tip

Ensure not to overbake the pop tarts; they should be just slightly golden to maintain a soft texture.
