Ingredients

  • 1 cup almond flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup coconut flour
  • 1/4 cup granulated sweetener
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup sugar-free jam

Instructions

  • Preheat oven to 350°F.
  • In a large bowl, mix together almond flour, protein powder, coconut flour, sweetener, baking powder, and salt.
  • Add in applesauce, almond milk, egg, and vanilla extract. Mix until well combined.
  • Divide dough into 2 equal parts. Roll out each part into a rectangle, about 1/4 inch thick.
  • Spread jam onto one rectangle, leaving a small border around the edges.
  • Place the other rectangle on top and press the edges together to seal.
  • Cut into 8 equal pieces and place on a baking sheet lined with parchment paper.
  • Bake for 12-15 minutes, or until golden brown.
  • Let cool before serving.
