Ingredients
- 1 cup almond flour
- 1/2 cup vanilla protein powder
- 1/4 cup coconut flour
- 1/4 cup granulated sweetener
- 1/4 cup unsweetened applesauce
- 1/4 cup almond milk
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup sugar-free jam
Instructions
- Preheat oven to 350°F.
- In a large bowl, mix together almond flour, protein powder, coconut flour, sweetener, baking powder, and salt.
- Add in applesauce, almond milk, egg, and vanilla extract. Mix until well combined.
- Divide dough into 2 equal parts. Roll out each part into a rectangle, about 1/4 inch thick.
- Spread jam onto one rectangle, leaving a small border around the edges.
- Place the other rectangle on top and press the edges together to seal.
- Cut into 8 equal pieces and place on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until golden brown.
- Let cool before serving.
