Ingredients
- 1 lb. chorizo sausage, casings removed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 lb. potatoes, peeled and diced
- 1 can (14.5 oz.) diced tomatoes
- 1 cup chicken broth
- 1 tsp. paprika
- 1/2 tsp. cumin
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Instructions
- In a large skillet, cook the chorizo over medium heat until browned and cooked through, breaking it up into small pieces with a wooden spoon.
- Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
- Add the potatoes, diced tomatoes (with their juice), chicken broth, paprika, cumin, salt, and pepper to the skillet. Stir to combine.
- Bring the mixture to a simmer and cook until the potatoes are tender and the liquid has thickened, about 20-25 minutes.
