Ingredients

  • 1 lb. chorizo sausage, casings removed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 lb. potatoes, peeled and diced
  • 1 can (14.5 oz.) diced tomatoes
  • 1 cup chicken broth
  • 1 tsp. paprika
  • 1/2 tsp. cumin
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  • In a large skillet, cook the chorizo over medium heat until browned and cooked through, breaking it up into small pieces with a wooden spoon.
  • Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
  • Add the potatoes, diced tomatoes (with their juice), chicken broth, paprika, cumin, salt, and pepper to the skillet. Stir to combine.
  • Bring the mixture to a simmer and cook until the potatoes are tender and the liquid has thickened, about 20-25 minutes.
