About this recipe

Experience the warmth and flavor of a classic Spanish-inspired dish, where robust chorizo pairs perfectly with tender potatoes in a rich, aromatic tomato sauce. Perfect for a cozy dinner, this dish brings the taste of tradition with a modern twist.

Ingredients

  • 1 lb chorizo sausage, casings removed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 lb potatoes, peeled and diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup low-sodium chicken broth
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp chopped fresh parsley, for garnish

Directions

  1. 1

Heat a large skillet over medium heat and add the chorizo. Cook until browned, breaking it into small pieces.

  2. 2

Add chopped onion and minced garlic to the skillet. Sauté until the onion is translucent.

  3. 3

Stir in diced potatoes, canned tomatoes (including juice), chicken broth, smoked paprika, and cumin.

  4. 4

Season with salt and pepper, then bring the mixture to a simmer.

  5. 5

Cook uncovered until potatoes are tender and sauce is thickened, about 25 minutes.

  6. 6

Garnish with fresh parsley before serving.

Chef's tip

For a richer flavor, consider using smoked chorizo and adding a splash of red wine during cooking.
