Ingredients
- 1 head of cabbage
- 2 carrots
- 2 celery stalks
- 1 onion
- 3 cloves of garlic
- 4 cups of vegetable broth
- 1 can of diced tomatoes
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- Salt and pepper to taste
Instructions
- 1. Chop the cabbage, carrots, celery, onion, and garlic.
- 2. In a large pot, heat some oil over medium heat.
- 3. Add the chopped vegetables to the pot and sauté until they start to soften.
- 4. Pour in the vegetable broth and diced tomatoes.
- 5. Add the dried thyme, dried oregano, salt, and pepper.
- 6. Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes.
