Ingredients
- 1 head of cabbage, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 can of diced tomatoes
- 4 cups of vegetable broth
- 1 tsp of dried thyme
- 1 tsp of dried oregano
- 1 tsp of paprika
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until fragrant.
- Add the carrots and celery and cook for 5 minutes.
- Add the cabbage and cook for another 5 minutes.
- Add the diced tomatoes, vegetable broth, thyme, oregano, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
