Ingredients
- 1 cup of rice
- 1 tablespoon of vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon of ginger, grated
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of broccoli florets
- 1 cup of sliced mushrooms
- 1 cup of sliced carrots
- 1 cup of sliced zucchini
- 1/4 cup of soy sauce
- 1 tablespoon of honey
- 1 tablespoon of cornstarch
- 1/4 cup of water
- 1/4 cup of chopped scallions
Instructions
- Cook the rice according to package instructions.
- Heat the oil in a large skillet over medium-high heat.
- Add the onion, garlic, and ginger and cook for 2-3 minutes, until fragrant.
- Add the bell peppers, broccoli, mushrooms, carrots, and zucchini and cook for 5-7 minutes, until the vegetables are tender.
- In a small bowl, whisk together the soy sauce, honey, cornstarch, and water.
- Pour the sauce over the vegetables and stir to coat.
- Cook for an additional 2-3 minutes, until the sauce has thickened.
- Serve the vegetables over the rice and garnish with chopped scallions.
