Ingredients

  • 2 garlic cloves, minced
  • 1 tablespoon of ginger, grated
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup of broccoli florets
  • 1 cup of sliced mushrooms
  • 1 cup of sliced carrots
  • 1 cup of sliced zucchini
  • 1/4 cup of soy sauce
  • 1 tablespoon of honey
  • 1 tablespoon of cornstarch
  • 1/4 cup of water
  • 1/4 cup of chopped scallions

Instructions

  • Cook the rice according to package instructions.
  • Heat the oil in a large skillet over medium-high heat.
  • Add the onion, garlic, and ginger and cook for 2-3 minutes, until fragrant.
  • Add the bell peppers, broccoli, mushrooms, carrots, and zucchini and cook for 5-7 minutes, until the vegetables are tender.

  • Pour the sauce over the vegetables and stir to coat.
