Ingredients
- 1 cup buckwheat
- 2 cups water
- 1 lb chicken breast, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- 1. Rinse the buckwheat and place it in a pot with 2 cups of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until tender.
- 2. While the buckwheat is cooking, heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, or until browned on all sides.
- 3. Add the bell peppers, onion, and garlic to the skillet and cook for an additional 5-7 minutes, or until the vegetables are tender and the chicken is cooked through.
