Ingredients

  • 1 cup buckwheat groats
  • 2 cups water
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped onions
  • 1/4 cup sliced mushrooms
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • 1. Rinse the buckwheat groats under cold water.
  • 2. In a medium saucepan, bring 2 cups of water to a boil.
  • 3. Add the rinsed buckwheat groats to the boiling water, reduce heat to low, cover, and simmer for 10-12 minutes or until all the water is absorbed.
  • 4. In a separate skillet, heat olive oil over medium heat.
  • 5. Add the diced bell peppers, onions, and mushrooms to the skillet and sauté until tender.
  • 6. Add the cooked buckwheat, cherry tomatoes, and feta cheese to the skillet and stir to combine.
  • 7. Season with salt and pepper to taste.
