Ingredients
- 1 cup buckwheat groats
- 2 cups water
- 1/2 cup diced bell peppers
- 1/4 cup chopped onions
- 1/4 cup sliced mushrooms
- 1/4 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- 1. Rinse the buckwheat groats under cold water.
- 2. In a medium saucepan, bring 2 cups of water to a boil.
- 3. Add the rinsed buckwheat groats to the boiling water, reduce heat to low, cover, and simmer for 10-12 minutes or until all the water is absorbed.
- 4. In a separate skillet, heat olive oil over medium heat.
- 5. Add the diced bell peppers, onions, and mushrooms to the skillet and sauté until tender.
- 6. Add the cooked buckwheat, cherry tomatoes, and feta cheese to the skillet and stir to combine.
- 7. Season with salt and pepper to taste.
