Ingredients

  • 1 cup lentils
  • 2 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 potatoes, peeled and diced
  • 1 head broccoli, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  • In a large pot, bring the lentils and water to a boil. Reduce heat and simmer for 20 minutes.
  • In a separate pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened.
  • Add the potatoes, broccoli, cumin, paprika, salt, and black pepper to the pan. Cook for 10 minutes, stirring occasionally.
  • Add the cooked lentils to the pan and stir to combine. Cook for an additional 5 minutes.
