Ingredients
- 1 cup lentils
- 2 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 potatoes, peeled and diced
- 1 head broccoli, chopped
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
Instructions
- In a large pot, bring the lentils and water to a boil. Reduce heat and simmer for 20 minutes.
- In a separate pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened.
- Add the potatoes, broccoli, cumin, paprika, salt, and black pepper to the pan. Cook for 10 minutes, stirring occasionally.
- Add the cooked lentils to the pan and stir to combine. Cook for an additional 5 minutes.
