Ingredients
- 1 cup brown rice
- 2 cups water
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 head broccoli, cut into florets
- 1 red bell pepper, sliced
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp cornstarch
- 1 tsp garlic powder
- 1 tsp ginger powder
- 1/4 tsp red pepper flakes
- Salt and pepper, to taste
Instructions
- In a medium saucepan, combine the brown rice and water. Bring to a boil, then reduce heat to low and cover. Cook for 40-45 minutes, or until the rice is tender and the water is absorbed.
- While the rice is cooking, heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, or until browned and cooked through.
- Add the broccoli and red bell pepper to the skillet and cook for an additional 3-5 minutes, or until the veggies are tender-crisp.
- In a small bowl, whisk together the soy sauce, honey, cornstarch, garlic powder, ginger powder, red pepper flakes, salt, and pepper. Pour the sauce over the chicken and veggies in the skillet and stir to coat.
- Cook for an additional 2-3 minutes, or until the sauce has thickened and the chicken and veggies are coated.
- Divide the rice among four bowls and top with the chicken and veggie mixture. Serve hot.
