Ingredients

  • 1 cup chopped broccoli
  • 1 can artichoke hearts, drained and chopped
  • 1 cup shredded cheddar cheese
  • 4 eggs, separated
  • 1/4 cup flour
  • 1/4 cup butter
  • 1 cup milk
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  • Preheat oven to 350°F.
  • In a saucepan, melt butter over medium heat. Stir in flour until smooth.
  • Gradually add milk, stirring constantly until thickened.
  • Remove from heat and stir in cheese until melted.
  • In a separate bowl, beat egg yolks. Slowly add cheese mixture, stirring constantly.
  • Stir in broccoli and artichokes.
  • In a clean bowl, beat egg whites until stiff peaks form. Gently fold into broccoli mixture.
  • Pour mixture into a greased souffle dish.
  • Bake for 40-45 minutes or until puffed and golden brown.
