Ingredients
- 1 cup chopped broccoli
- 1 can artichoke hearts, drained and chopped
- 1 cup shredded cheddar cheese
- 4 eggs, separated
- 1/4 cup flour
- 1/4 cup butter
- 1 cup milk
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Preheat oven to 350°F.
- In a saucepan, melt butter over medium heat. Stir in flour until smooth.
- Gradually add milk, stirring constantly until thickened.
- Remove from heat and stir in cheese until melted.
- In a separate bowl, beat egg yolks. Slowly add cheese mixture, stirring constantly.
- Stir in broccoli and artichokes.
- In a clean bowl, beat egg whites until stiff peaks form. Gently fold into broccoli mixture.
- Pour mixture into a greased souffle dish.
- Bake for 40-45 minutes or until puffed and golden brown.
