Nutrition Per Serving
- 1 cup quinoa
- 2 cups water
- 2 cups broccoli florets
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 avocado, sliced
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
- In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the quinoa is tender and the water has been absorbed.
- While the quinoa is cooking, steam the broccoli florets until tender, about 5-7 minutes.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken and season with garlic powder, onion powder, paprika, salt, and black pepper. Cook for 5-7 minutes, or until the chicken is cooked through.
- To assemble the power bowls, divide the quinoa, broccoli, and chicken among four bowls. Top each bowl with sliced avocado, chopped cilantro, and a squeeze of lime juice.
