Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 cups broccoli florets
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  • In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the quinoa is tender and the water has been absorbed.
  • While the quinoa is cooking, steam the broccoli florets until tender, about 5-7 minutes.
