Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 1 can diced tomatoes
- 1 can chickpeas, drained and rinsed
- 4 large eggs
- Salt and pepper, to taste
- Fresh cilantro, chopped, for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the curry powder, cumin, coriander, and cayenne pepper and cook for 1-2 minutes, until fragrant.
- Add the diced tomatoes and chickpeas and bring to a simmer.
- Make four wells in the tomato mixture and crack an egg into each well.
- Cover the skillet and cook until the eggs are set, about 5-7 minutes.
- Season with salt and pepper to taste and garnish with fresh cilantro.
- Serve hot and enjoy!
