Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1 can diced tomatoes
  • 1 can chickpeas, drained and rinsed
  • 4 large eggs
  • Salt and pepper, to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  • Heat the olive oil in a large skillet over medium heat.
  • Add the onion and garlic and cook until softened, about 5 minutes.
  • Add the curry powder, cumin, coriander, and cayenne pepper and cook for 1-2 minutes, until fragrant.
  • Add the diced tomatoes and chickpeas and bring to a simmer.
  • Make four wells in the tomato mixture and crack an egg into each well.
  • Cover the skillet and cook until the eggs are set, about 5-7 minutes.
  • Season with salt and pepper to taste and garnish with fresh cilantro.
  • Serve hot and enjoy!
